Jerky Seasoning

Ingredients:

1 TBSP peppercorns of choice
4 TBSP sea-salt of choice
2 tsp garlic powder
2 TBSP Chimayo chili pepper
1 whole nutmeg

Grind in a coffee/spice grinder until finely ground. 

Sprinkle sparingly on both sides of  3/16" thick slices/strips of beef flank steak. 

Dehydrate @ 145 degrees F for 6 - 8 hours in a food dehydrator until dry yet still a bit pliable (I use a Harvest Maid dehydrator). 

Bag up in ziplock bags to store.  Enjoy!!!!
