Grilled Pepper Tomatoes and Shrimp

Makes two servings

Shrimp preparation:

1 pound medium size shrimp - pre-cooked
½ Tablespoon red sea-salt
5 drops Chinese hot sauce
¼ cup lemon juice

Rinse, drain and dry shrimp. Mix salt, hot sauce and lemon juice in a medium size zip lock bag.  Add shrimp and gently toss between your hands until the shrimp are covered.  Set aside.

Tomato slice ingredients:

4 large tomatoes slice ¼ inch thick
2 gloves fresh garlic minced
¼ cup freshly chopped parsley
Freshly ground Ebony and Ivory pepper mix
Kosher salt
Red wine vinegar
Chinese hot sauce
Olive oil


Preparation:

Place tomato slices on wax paper.  Sprinkle very lightly with vinegar and rub one tiny drop of hot sauce on each slice on one side only.  Rub olive oil on each side with finger tips.  Sprinkle with minced garlic, Kosher salt and parsley.  Grind a light layer of the black and white pepper combo on over all.

Grill tomato slices spice side up on top rack of grill, or place on oiled baking sheet and broil/grill in oven until deep brown.

Drain shrimp in colander.

Transfer three hot tomato slices to warm plate and stack several shrimp on top.  Sprinkle with parsley and serve.
